How the dream was born.....
We had been visiting Mexico for years and had given thought to living there one day. Then one day, back in 2005, we invited our good friend Joe King Carrasco to come play at a party we were having at the house as a celebration of Lizard's birthday and our son's last hooorah before departing for his first tour of Iraq. After the party was over and the guests had gone home we were loading Joe and his band down with leftover BBQ and cake when Joe says, "Ya know, we both love Mexico, yall should really open a restaurant and bar in Mexico and I can be the house band." Well that planted the seed, so the next thing to do was decide on a name and location. After tossing around a few ideas, we finally decided to use a combination of Paul's nickname from Jr High and High School (aka Lizard) and Joe's name giving a name to our dream Lizard Joes. Our next task was to find a location which would prove to be an long and somewhat expensive process. Given Joe is a fan of the west coast, our initial journeys for a location took us to Acapulco, Cabo, Puerto Vallarta, Las Cruz, Sayulita... However, we are partial to the east coast specifically the Yucatan which is where we spent most of our Mexico vacations. This lead us to journeys to Cancun, Puerto Morales, Playa de Carmen, Tulum ... all of which proved to be either totally unaffordable or were quickly on their way to becoming less representative of the laid back, hospitable, friendly kind of place we have always associated with Mexico. Just as the dream began to flicker, or good friend of many years in Cancun suggested we checkout the beach communities near his home town of Merida where after several trips we finally found a large, friendly Mayan and Mexican community of small fishing villages, unspoiled beaches, emerald green waters, a major nearby city (Merida) offering access to all the cultural, health and shopping needs one could ever need.
