Who is Lizard Joes?

Lizard Joe's is owned and operated by Paul (aka Lizard), Cynthia (aka SeaLizard) and Travis (Mebb) but inspired by Joe "King" Carrasco. Hence the name Lizard Joes.
Paul has worked in the corporate world for many years but has always had passion for cooking authrentic Texas slow smoke BBQ and side dishes. Cynthia also worked many years in the corporate world and prior to pursuing her passion for helping people and becoming a Massage Therapist. Both Paul and Cynthia are lovers and frequent vistiors to Mexico's beaches as well as Joe King Carrasco's #1 Fans.
In 2004, Paul and Cynthia's son was about to deploy on his 1st tour of Iraq as part of the largest Texas National Guard deployment since WWII, Joe King Carrasco and friends came to play at his send off party and Dad smoked up some good ole brisket, pulled pork, grilled corn on the cob, some Texas Beans and cornbreaad and of course plenty of cold beer and tequila. When the party ended, Joe, Paul and Cynthia were talking about how much fun the party and how good the food was when Joe said, "You know, we should open a beach bar in Mexico, yall do the cookin and I'll do the playing" and the dream of Lizard Joes was born.
After spending a couple of years searching the Mexican Riviera and West coast around Puerto Vallarta, our good friend Roberto pointed us to his home town of Merida in the Yucatan where we finally found affordable property, friendly people, unspoiled white sand beaches on the Gulf of Mexico and a home for Lizard Joes Hotel Bar and Restaurante.
