Botanas (Appitizers)

  • Armadillo Eggs: jalapeno pepper stuffed with cheese, wrapped in a sauage breading and baked to perfection
  • Beef Chili: Bowl of authentic Texas beef chili (no beans) made from scratch, served with chips
  • Texas Caviar: A Texas version of pico de gallo with peppers, onion, tomato and beans, served with chips
  • Texas Toothpicks: Thin sliced, grilled bell peppers and onions served with choice of dressing

Authentic Texas Bar-B-Que (slow smoked with homemade sauces)

  • Beef Sausage
  • Sliced or Chopped Brisket
  • Pulled Pork
  • Baby Back Pork Ribs

Side Dishes

  • Texas Beans: slow cooked spicy pinto beans mashed and fried
  • Refried Black Beans: refried black beans with a Cuban influence
  • Grilled Corn on the Cob: smothered in butter and spices and grilled till tender
  • Potato Salad: old family recipie, we can only tell you it has potatoes in it an not be disowned

Breads

    Our rolls and buns are made fresh daily by a local Panadera (Bakery) here in Chelem and homemade cornbread available when we can find cornmeal at the local market

Desserts

  • Cindy's Banana Pudding (a slight variation from home since made with local ingredients)
  • Apple Pie
  • Chocolate Cake
  • Texas Dirt (crushed oreo cookies layered with pudding and whip cream) it looks like dirt but tastes sinful
